How to Boil an Egg
Precise timing for soft, medium, and hard-boiled eggs. Plus the ice bath trick that makes peeling effortless.
Boiling an egg should be the simplest thing in the world. And yet somehow, it is weirdly hard to get right. Rubbery whites, chalky green yolks, shells that take five minutes of picking to remove. We have experienced all of these and worse.
The problem is the vagueness of the usual instructions. "Boil some water, put the egg in, wait a while." That "wait a while" is where everything goes wrong. The difference between a jammy, creamy yolk and a dry, crumbly one is literally 2 minutes of cook time.
After ruining more eggs than we would like to admit, we landed on a method that produces consistent results every single time. The keys are starting with boiling water (not cold), timing precisely, and using an ice bath immediately after.
A pot large enough to hold your eggs in a single layer. Water. A slotted spoon or spider strainer for lowering eggs gently. A timer (your phone works). A bowl of ice water ready before you start (a mixing bowl with cold water and a generous handful of ice cubes).
Bring water to a full boil first
Fill a pot with enough water to cover the eggs by about one inch when they are submerged. Bring it to a full, rolling boil over high heat. Starting with boiling water rather than cold water is the key to consistent timing. If you start eggs in cold water, the time they spend heating up varies based on your stove, pot material, water volume, and altitude. Starting in already-boiling water means your timer begins at the same temperature every time, producing reliable, repeatable results.
Lower eggs in gently
Use a slotted spoon or a spider strainer to lower each egg slowly into the boiling water. Do not drop them. Dropping causes cracks from the thermal shock and impact. Lower them one at a time until they rest on the bottom. The water will temporarily stop boiling. That is fine. Keep the heat on high and it will return to a boil within 30 to 60 seconds. Start your timer once the water returns to a boil. If you are cooking a large batch (more than 6 eggs), the temperature drop is larger, so give it an extra 30 seconds of cook time.
Time precisely for your desired doneness
These times are for large eggs straight from the refrigerator. If your eggs are room temperature, subtract 1 minute. Soft-boiled (runny yolk, barely set white) is 6 minutes. Jammy (creamy, fudgy yolk with fully set white) is 7 minutes. Medium (mostly set yolk with a slightly soft center) is 9 minutes. Hard-boiled (fully set yolk, no green ring) is 11 to 12 minutes. Overcooked (green ring around yolk, crumbly texture) happens at 13 minutes and beyond. Set a timer. Do not guess.
Good to know: The difference between a perfect hard-boiled egg and an overcooked one with a green ring is just 1 to 2 minutes. Always err on the shorter side. You can always cook an egg longer, but you cannot uncook one.
Transfer immediately to an ice bath
The second your timer goes off, use the slotted spoon to transfer eggs directly into your prepared bowl of ice water. This serves two critical purposes. First, it stops the cooking process instantly. Without the ice bath, residual heat continues cooking the egg for several minutes, which pushes it past your target doneness. Second, it causes the egg to contract slightly inside the shell, creating a small gap between the membrane and the white. This gap is what makes peeling easy. Leave the eggs in the ice bath for at least 5 minutes. Longer is fine.
Peel under running water
Tap the egg firmly on a hard surface to crack the shell all over. Roll it gently between your palms to create a network of small cracks across the entire surface. Start peeling at the wider end of the egg where the air pocket is (there is usually a small gap there). Peel under a gentle stream of cold water. The water gets under the membrane and helps separate the shell from the white in large pieces instead of tiny frustrating fragments. A properly ice-bathed egg should peel cleanly in 4 or 5 large pieces.
The timing chart is everything. Even 30 seconds makes a visible difference in yolk texture. We recommend starting with 7 minutes (jammy yolk, set whites) and adjusting from there. Once you find your personal preference, you will hit it perfectly every time because the method is completely repeatable. Boiled eggs keep in the refrigerator for up to one week with shells on. Peel them right before eating for the best texture. If you meal prep, peel them all at once and store in an airtight container with a damp paper towel to prevent them from drying out.

The green ring is iron sulfide, formed when iron in the yolk reacts with hydrogen sulfide in the white at high temperatures over time. It is completely harmless to eat but indicates the egg was overcooked. Keep hard-boiled eggs at 11 to 12 minutes maximum and always use the ice bath to prevent carryover cooking.
Yes, noticeably so. Very fresh eggs (1 to 3 days old) have whites that bond tightly to the inner membrane, making clean peeling nearly impossible regardless of technique. Eggs that are 7 to 14 days old have a slightly higher pH in the white, which weakens the membrane bond. If you buy eggs specifically for boiling, let them sit in the fridge for a week first. The ice bath technique helps with fresh eggs too, but older eggs are still easier.
At high altitudes, water boils at lower temperatures, which means eggs cook slower. Add approximately 1 minute of cooking time for every 1,000 feet above 3,000 feet elevation. For example, at 5,000 feet above sea level, a 7-minute jammy egg might need 9 minutes. You may need to experiment a few times to find your altitude's sweet spot.
Unpeeled hard-boiled eggs keep in the refrigerator for up to 7 days. Peeled eggs should be eaten within 2 to 3 days and stored in an airtight container with a damp paper towel to prevent them from drying out and absorbing fridge odors. Soft and medium-boiled eggs are best eaten immediately or within 1 to 2 days because the runny yolk does not store as well.
